Hop-on is an easy drinking session IPA that’s low in alcohol and bitterness but balances malty sweetness with fruity hop flavours and aromas making it the perfectly balanced pairing for your wings using this simple recipe.
Ingredients:
For the wings
1kg chicken wings
1 tablespoon paprika
1 teaspoon salt
½ teaspoon chilli powder
1 tablespoon butter
For the blue cheese dip
150ml buttermilk
150ml soured cream
85g blue cheese, crumbled
1 garlic clove, crushed
¼ tsp sweet paprika
Method for the wings
Preheat the oven to 200°C. Mix the dry ingredients together in a large clear zip lock bag or bowl. Feel free to get creative with your spices in addition to what we have listed. Increase the chilli powder or add cayenne pepper if you want to turn the heat up. Oregano and thyme also work well.
Add the chicken wings into the spice mix and ensure they are well coated.
Add the tablespoon of butter to a baking tray and leave in the oven until it melts.
Add the wings to the baking tray and toss them in the butter as this will help ensure the spice mix doesn’t just burn in the heat. Spread them evenly in the baking tray and cook for 20 minutes then turn them and cook for another 20 minutes.
Method for the dip
As for the dip, mix all the ingredients together with a pinch of salt, cover and chill until needed. Simple!
