Cooking with Hope Beer: Mussels in Grunt, Tomato & Chilli Broth

Mussel season is almost here so it’s fitting that we kick off our #FoodLovesHope series with this winner by her. Using our Grunt Citrusy Wheat Beer she has created a wonderfully simple and versatile Tomato & Chilli Broth that works equally as good as a starter or main course. Enjoy!

Cook time: 10 minutes

Ingredients

  • 1kg Mussels
  • 1/2 can chopped tomatoes
  • 2tbsp rapeseed oil
  • 2tbsp tomato paste
  • 1 thinly sliced white onion
  • 2 garlic cloves finely chopped
  • 1 red or green chilli (deseeded optional) finely chopped
  • 330ml Grunt
  • Fresh parsley and lemon to garnish

Method

Heat up the rape seed oil in a deep pot and add the onion, garlic and chilli. Cook on a low heat for two to three minutes until soft and add the tomato paste. Cook for another two minutes before adding the chopped tomatoes. Pour in the Grunt and stir to combine all the ingredients.

Add the mussels and stir well to ensure they are all covered in the broth and cook for three minutes. Lower the heat, cover and leave to simmer for 1.5 minutes. In the meantime, finely cut some fresh parsley and slice a lemon into thick wedges for the garnish.

Once the mussels are cooked serve immediately with the garnish. Be sure to discard those that haven’t opened!
