The 5th anniversary of our very first brew here at Howth Junction is 16th June, Bloomsday! So what better way to celebrate than with a Bloom beer – we were looking for a floral infusion to add a layer of flavour to a Belgian Tripel base beer. Anyone familiar with the hill of Howth will know the gorse is in full bloom at this time of year, turning the hill a bright yellow hue. With help from Nicole Dunne at Howth Foraging, we tracked down the juiciest gorse, picked in morning sunshine and concocted a delicious gorse cordial. This cordial was then added to the base beer towards the end of fermentation. The result is a deliciously floral Tripel, packing a punch at 8.8% ABV!
