Minimum effort, maximum flavour. That’s what you get with this beef meatloaf recipe. It serves four to six people and if you have leftover slices enjoy them in a sandwich, sort of like a rough pâté! Handsome Jack IPA pairs well with many meat dishes including burgers and roast meats, making it the perfect accompaniment to this meatloaf.
Ingredients
400g beef mince
100g fresh breadcrumbs
1 egg, beaten
1 onion, diced
1 carrot, finely diced
1 stick celery, thinly sliced
2 garlic cloves, crushed
4 tbsp tomato puree
1tbsp finely chopped parsley
1 tbsp Worcestershire sauce
1 tsp Dijon mustard
salt and pepper
Grated cheddar cheese & chopped parsley for garnish (optional)
Method
Preheat the oven to 180 degrees. Line a loaf tin with non-stick baking paper.
In a large bowl combine all the ingredients and season with salt and pepper. Place the mixture in the lined loaf tin ensuring no empty spaces in the corners and smooth the surface. Cover with foil and bake in the oven for 25 minutes, until cooked through.
Remove from the oven and drain any excess liquid. Top with the grated cheddar and chopped parsley before cutting into slices and serving.
