Handsome Jack IPA Pizza Dough

Handsome Jack IPA Pizza Dough

Inspired by Saturday Pizzas by Ballymaloe Cookery School, a must have book for every pizza fan, we swapped out Irish Stout for our Handsome Jack IPA. It worked so well in our brown bread recipe it made sense to add it to pizza dough!

Goes great with our BBQ Beef Pizza recipe.

Ingredients (Makes 4 x 10″ pizzas)

180ml Handsome Jack IPA

180ml water

500g white flour. (Tip: If you would like to add greater texture and flavour to the dough use 400g of white flour and 100g of wholemeal rye flour)

7g sachet of yeast

1tsp salt

If you have a stand mixer put all the ingredients into the bowl of the mixer and mix for 10 minutes on a low to medium speed. If you don’t have a mixer you can mix using your hands.

By the end of the ten minutes it should be smooth, springy and just a little bit sticky. If it’s very sticky turn the mixer back on and add another tablespoon of flour, or a little more until it’s the right texture.

Sprinkle a clean counter top with a little flour and knead for a couple of minutes, until dough is a smooth and forms into a round ball. Test it by pressing your finger against it, if it springs back it’s ready.

Cut the ball in half, and half again, and roll each piece into small smooth ball. Put each dough ball into a large bowl, dusted with flour, and cover with a tea towel. Leave in a warm enough place until doubled in size, give it at least an hour.

When dough is ready, dust a counter top with flour and roll out to a round size approx 10″ in size for each dough ball.
