Limited Edition 39: Pineapple & Passion Fruit Sour

This summer’s sour beer, Limited Edition No. 39, recreates one of our older recipes, Limited Edition No. 15, a sour beer infused with a blend of pineapple and passion fruit.

Our sour beer is brewed with a basic blonde ale as the base but fermented with a special yeast called lachancea thermotolerans. This yeast has the ability to transform sugar not only to alcohol but also to lactic acid, thus lending sourness and acidity to the beer. We then add large amounts of pineapple and passion fruit puree directly to the fermentation, where the naturally sour and acidic flavours of the fruit enhance the sourness already caused by the fermentation. The result is a bright, fruity and zesty sour beer that is perfect for summer.

Food pairing: The tangy fruit notes complement light seafood dishes, like grilled shrimp or scallops. Grilled chicken dishes also harmonize well with the beer’s fruity and sour profile.
