Queen Bee is a collaboration with our sister brewery, Hoop, in Zaandijk, The Netherlands. It has as its base a blonde ale, with a mild degree of hop bitterness and aroma provided by European hops Spalt, and Huell Melon. To this, we have added quite a large quantity of Ivy honey, locally sourced from Fingal, Dublin. The simple foundation of a blonde ale with low hopping rates allows the particular flavour of the local honey to shine, with a clear rich honey aroma on the nose, which is enhanced by the natural honey-melon aroma of our late hops. This is followed by a smooth honey flavour and finishing with certain faint herbal and minty notes.
Our honey was sourced from the Figures Crossed Farm, who has beehives in Naul, and many other locations across Fingal.
Aroma: Expect a clear rich aroma of honey and honey-melon.
Flavour: Honey flavour with a faint herbal and minty finish.
Food pairing: This blonde ale pairs well with grilled chicken, seafood (salmon, white fish), salads, and mild cheeses like Brie.
